Aged in oak, the small-batch, 121-proof Chacho Bourbon Whiskey at Columbia is unique to the antique restaurant. It is the main ingredient in the Chacho Manhattan, which is named for Evelio “Chacho” (short for “muchacho”) Hernandez, the youngest son of Columbia founder, Casimiro Hernandez Sr.
2 ounces Chacho Bourbon Whiskey
¼ ounce guava syrup
½ ounce sweet vermouth
2 dashes bitters
Stir ingredients and pour in a short glass over ice. Garnish with a lemon twist and orange zest.
