Incatini at Jalea.

At Jalea (which was known as Sangria until late July), the cocktails are as authentic as the Spanish and South American tapas. The downtown Sarasota eatery’s Incatini—with its sweet, fruity, cola flavors—is one of the primo Peruvian libations here.

INGREDIENTS:
1½ ounces Pisco Portón
2 ounces Chicha Morada (Peruvian purple corn drink with pineapple, cinnamon and lime juice, made in-house)
1 ounce Inca Kola (Peruvian soda)

MIXOLOGY:
Combine Pisco Portón and Chicha Morada in a shaker with ice. Strain and pour into a martini glass. Top with Inca Kola.
