Mi Pueblo’s Paloma.

An organic margarita or a fresh mojito may have their pull, but it was Mi Pueblo’s Paloma that recently bewitched me as I scarfed a Taco de Paz with sunflower cream. Tart, sour and tequila-filled, the Mexican Paloma (which means “dove” in Spanish) definitely has wings.

INGREDIENTS:
2 ounces Cazadores Blanco tequila
3 ounces grapefruit juice
3 ounces lemon-lime soda
½ ounce lime juice

MIXOLOGY:
Combine ingredients in a shaker with ice. Serve in a Collins glass, on the rocks, with a salt rim and a lime wedge.
