Mixologist Roy Roig and his team at Jack Dusty get down to the bare bones of drink slinging with cocktails like the Tidewrack Martini (concocted with rosemary-and-thyme-infused vodka made in-house). No imitations or flavor substitutes here. These bartenders are even making their own bitters now.

INGREDIENTS:
1¼ ounces vodka infused with rosemary and thyme
¾ ounces dry vermouth
2 bar spoons Cointreau
1 bar spoon kummel (coriander seed liqueur)

MIXOLOGY:
Pour ingredients into a shaker with ice and strain into a chilled, wide-mouth champagne flute. Garnish with an oyster shell, thyme and rosemary sprigs, and three green queen olives (marinated for 48 hours in three parts dry vermouth and one part vodka, with sprigs of fresh thyme and rosemary).
