Restaurant Review: White Buffalo Saloon

If you’ve been paying attention to Ticket, you likely know that White Buffalo Saloon has become a nightlife destination for a surprisingly large swath of Sarasota. Makes sense — although the restaurant, bar and music/dancing venue is tucked away from the hustle and bustle near the corner of McIntosh and Ashton roads, once you get there its charms are obvious.

Mike and Steve Evanoff — owners of the Evie’s chain of taverns, restaurants, car washes and mini-golf — transformed an old appliance rental warehouse into a country and western temple, with soaring ceilings, a long and beautiful bar and a massive dance floor that fronts a dedicated stage. The glowing chandeliers that hang above the bar area may seem incongruous at first glance, but it’s the kind of classy element that serves to throw the rough wood and chunky furniture into stark relief. The place looks great.

And, as a nightlife spot, it seems to be thriving. There’s live music on the weekends, line-dancing lessons on Wednesdays and plenty of entertainment value in the crowd alone.

But as a restaurant? If White Buffalo wants to do more than just offer convenience food for people coming to dance and party, it needs to attract a different clientele than the after-dark crowd, folks willing to come to eat dinner between five and eight and move on. Families, work friends, and first dates.

For this, White Buffalo might need to do a little more work, starting with the building’s exterior. From the road, it looks like, well, an old appliance warehouse, with little signage and nothing to encourage people to pull in to the parking lot out back and see the beauty of the place.

Get people to the door and many will be tempted by White Buffalo’s menu. It’s filled with a mishmash of Southern comfort food filtered through modern, over-the-top dining sensibilities. That means pulled pork stuffed inside hefty fried onion rings, homemade potato chips doused in ranch dressing and wing sauce, mac-and-cheese covered in chili and wings that come with Garlic Parmesan Butter along with the usual Buffalo sauces. The number of things you can order fried is impressive, if not surprising: pickles, mac-and-cheese, green tomatoes, potatoes, onions, catfish, and more. Crowd-pleasers, for sure, and most of it executed well enough to satisfy a craving for filling, fat-driven flavor.

White Buffalo’s menu also features an array of barbecue, a selection of burgers and a line of pizzas. The barbecue varies in quality, from sauce-logged, featureless pork to wonderful brisket infused with a serious amount of smoke and a spicy kick. Both the chicken and ribs are adequate, but nothing to get excited about.

White Buffalo’s fried catfish is indicative of a lot of the menu. The fish is cooked right, moist and steamy on the inside, but the cornmeal crust is barely seasoned, a crunchy bit of texture that does nothing for the fish. Fried green tomatoes are similar, hard hockey pucks of cornmeal and grease that hide the essence of the veggie. Thick-cut meatloaf is overwhelmed with green pepper and sweet barbecue sauce, heavy and filling, but not necessarily satisfying.

Go back for a second visit and you’ll be tempted to try to overcome the potentially bland food with excess. Go for it — it’s what White Buffalo does best. Like The Duke burger, where your 10-ounce Angus beef patty will be topped with pork, chili, a fried egg, bacon and cheese until it doesn’t matter anymore how good any individual item is — trying to wrangle that burgerstein’s monster into your mouth will keep you plenty occupied. Same with White Buffalo’s “Spaghetti Western,” where the restaurant’s gooey mac-and-chese is covered in smoky, spicy chili made from burnt brisket ends. It’s tasty, sure, but my senses may be dulled by what can only be called a comfort coma.

Instead of judging White Buffalo’s food on its own merits, put it into context. The profusion of fried food, the heavy nature of the dishes, the reliance on fat for flavor — the restaurant is competing with chain restaurants more than it is aiming for gastronomical greatness. At that, it surpasses its competition, both in the quality of the food and the ambiance.

And you can always stick around and dance those extra calories off once the place really starts picking up.

I love the food at the White Buffalo
In my opinion it's the best food in Sarasota
I had the roasted goat sac with a vegetable medley smothered in onions
The portion was huge and the meat was nice and tough ,just the way I like it.

I haven't been to the White Buffalo and probably won't go due to some personal issues I have with the owners. However, I heard through some friends that the head cook was bragging about "his" great menu concept and food items that "he" came up with. Which is strange because I actually typed up and still have the original copy of the sample menu which John Levita (Evie's former food service manager) devised after much time spent with the owners at food shows, etc. So, just for the record it was John Levita who has brought you Evie's famous pizza, the former amazing pasta nights that y'all love and the delicious and unique menu at the White Buffalo.

The food at the WB is not bad. It's not a fine dinning restaurant so I don't get where you are coming from. It's a bar and dance hall that sells food. Which it is doing good at being all three. If you want fine dining go somewhere else and pay a lot and be disappointed, I'll stay here. Also the building was ASAP building rental industrial tools not an appliance store. Looks just fine to me also although parking can be an issue.

An article on the food at a country night club? honestly I would just expect the food to be decent...you want good food hit up somewhere then go to night club for what it's meant to be used for

Great prices on the food
If your gonna do Smoked Meats put a big smoker in the back and start smokin
Can't do it in a kitchen
Work on your BBQ sauce ....it needs to be tweaked
Focus on the burgers and smoked meat and you will do fine

Love the smoked chicken, BRISKET and ribs that come from the smoker out back...catfish is amazing when lightly blackened and am I the only one who has tried the cheese grits?

I also had the opportunity to see this menu in its infancy stages (@jim) and knw for a fact that much of the creativy in this menu came from a different source than you credited... Not that it has anything to do with how said food is executed at this point.

It's easy to buy trays of frozen meats from Sysco and reheat them. Then get a reviewer to believe you're cooking. Next time, go into the kitchen to see the prep.

funny thing ..John l walked out after 2 weeks of being there ,and all his pre made crap was replaced immediatly . the Evanoff family brought in several well known Chefs and a great managers to make things right after John messed them over. so check your sources and ,make an informed comment jackass

I went to the White Buffalo on a Saturday night. Too croweded and the layout was awful. It was hard to get on the dance floor since it only has a small entrance and seems "Corraled" in. THe food...well, sounds gross, just what we need more fried foods, but then these are adults attending and not really caring what they eat anyways. If I want a "drink" I will go elsewhere. I personally like Evies on Bee Ridge if I'm going to eat wings or something like that.

food was wonderful (if you like southern style food), atmosphere was great (if you are into country bars) servers were friendly (if you like being called "honey" and "shug"), and we went early enough for our kid to enjoy macaroni and cheese and coloring, then came back (without kid) to enjoy dancing and drinks. This place has the recipe for success and i hope they stick around for a while. im telling everyone i know about this "urban cowboy" gem.

you know why basking robbins has 52 flavors? because everyone has a different taste! some of us cowboys like a little meat on the bones. the foods good, the atmosphere is great and the music is awesome. imo, its the best bar in the county. a bad review because "fat" people come there? get real. im gonna be fat if i keep going there because the food and drinks are so damn good.

I was very disappointed with the restaurant in general. Our first visit was on a Wednesday night. The place was jam packed with every available redneck without a homelife. Our party of six, who arrived at 6pm, took more than two and a half hours to seat, even though there were emtpy chairs and tables everywhere. They chose not to seat anyone without a reservation. When the line dance lessons started - that was the most hysterical part of the entire evening. No one could hear the trainer or music, much less see the guy on stage due to the overwhelming amount of people on the dance floor and in the restaurant, not to mention the three different music stations they were playing at the same time. The food is nothing to write home about and the location is less than appealing. I feel sorry for the surrounding neighborhood that got stuck with a bar in the middle of a formerly quiet part of town. So sad - for me it was a total thrumbs down.

My family arrived at the restaurant and found the front doors locked. We could see people playing pool and looking back at us, so we walked around back and found a valet parking cars . . . really? A line dancing bar and grill with valet? REALLY?? We were then told there would be a three hour wait to be seated . . .again, I say really??? There were a ton of folks smoking up the back picnic area where we were waiting. After about a half hour - we left. Very disappointed with the county of Sarasota that they would let these people put a bar in the middle of an industrial part of town that is backed up by residences. NOT cool.

Have I been going to a different place than Nancy or Liz?? First off location. I live about 3 blocks from TWB. It in no ways affects my quality of life. There are NO HOUSES that are affected. So why not an industrial area. It's not like our county welcomes industry. So Liz, the BACKDOOR was locked. I was confused at first but once I found the FRONT DOOR I remembered how to get in the next time. GEEEZ. Some of you complained about parking...so why not a valet...yes you Liz Stewart. I use the valet parking every time. It totally takes care of the crowded parking lot issues. People. The parking is free. Nancy White...every redneck without a home life??? Are you crazy. Who else would you expect at a country bar. Barack Obama???? I'm a medical professional in town with a rural background and I would go to battle with anyone of those country men any day. They are true Salt of the earth Americans. I go to TWB at least once per week. Usually for dinner and watching the line dancing. I can tell you that "three stations" have never been playing at once nancy! The waitresses and wait staff are friendly, attractive and very efficient. The management is top notch and very friendly. I've never made a reservation and I have never had to wait to be seated. The food is just right. You pay a fair price for a fair meal. If you want gourmet, go to main st or st Armand's for $40 a plate meal. I love the food. I love the Hi Hat Ranch Nachos. The brisket is fabulous. In my opinion this place is just what this somewhat uppity town needs. On Wednesday for dancing lessons, most the folks are senior citizens out there dancing. Weekends a mix of 28 year olds and 50 year olds, all having a blast. Steve and Mike. Thanks for bringing TWB to our town. I've been here for over 50 years and this saloon is the best thing that's happened here in a long time!
