Big changes at the dining venues of the Ritz-Carlton Sarasota (1111 Ritz Carlton Drive, Sarasota, 309-2000, ritzcarlton.com/sarasota). We are told that by the end of September, the formal Vernona, known for its elaborate architecture and rich fabrics and accoutrements, will be transformed into a “waterfront fish house” with an entirely new design that will be casually elegant, chic yet unpretentious.
The new main dining room will feature a wide variety of fresh seafood, composed main plates and crafted cocktails in the more informal setting. The new name is yet to be determined.
Meanwhile, the Cad’Zan Lounge area with its clubby, dark wood surroundings, will be converted to a “pop-up” (temporary) concept — a cool, contemporary venue and market space, setting the scene for a permanent restaurant. Steaks, chops, mini whole fried chickens and innovative liquid desserts will be provided. Dwayne Edwards, an award-winning chef whose Italian restaurant was Zagat-rated among the top 10 in Portland, will be at the helm in this space. In addition, outdoor dining will be available.
