Darwin Santa Maria to open restaurant in Mad Crow space

Former owner/chef of Selva Grill and, most recently, a partner/chef at The Cottage of Siesta Key, Darwin Santa Maria is going to return to downtown Sarasota. Although there's no name attached to the new restaurant yet, it will be located in the former Mad Crow Brewery and Grill (1525 4th St., Sarasota). He will also remain as a consultant at The Cottage.

The new restaurant will feature urban street food with an upscale flair, including some favorites from Santa Maria's days at Selva Grill. The cuisine will include Peruvian, Italian and Asian flavors. He also plans to bring on board an award-winning brewmaster to take advantage of all that brewpub equipment sitting dormant in the restaurant.

The restaurant is scheduled to open in mid-January, around the same time that a new Peruvian restaurant -- Canta Rana -- will open around the corner on Fruitville.

Wow, that a big bite. I have thouroghly enjoyed Darwin's food while at Selva. But, that space is so big, with so little parking. I guess if they offer valet they have a petite chance. But, they will never fill such a large space. Also, went to try The Cottage a few months ago, but even though they were there, the kitchen closed early because it was slow. How convenient for them, and a wasted trip for me that I won't repeat.

Darwin is one of the most gifted and talented chefs around. His creations are artistic materspieces! He will do wonderful at this location and I can't wait for him to open.
